Lamb Curry

Lamb recipe

Marination Mix:
1tsp turmeric
1tsp chilli powder
2tsp salt
1lime juice
2tbsp yogurt
coriander leaves
mint leaves
Each finely chopped.
Make a paste out of it of all.
Mix 1kg of lamb
Marinate 2-3 hours.

Heat the pan.
Use 2tbsp oil in low flame
Add 8 cardamom pods
8 Cloves
2-3 Bay leaves
2 small cinnamon sticks
1tsp fennel seeds
1tsp Cummin seeds
After a gentle stir add 2 Onion finely chopped.
Sauté it until it turns translucent.

Add some salt at this point to hasten the process.

Add finely chopped tomato
1-2 big tomato (one tomato if you are adding tamarind juice)

Low flame till tomato is mushy.
Add tamarind juice(made of 1tbsp of dried tamarind)

Add garam masala 1tbsp
Coriander powder 2 tbsp
Mix well.
Add little water if it is getting sticky at the bottom.

Add marinated lamb and gently mix with the base.
Add green chillies vertically slit 3-4 depending on how hot you like it.
Allow it to cook in medium-high heat until the meat is cooked.

(Tamarind juice: can be made by soaking dry tamarind in hot water for 10minutes, squeeze out all the chunk and add only the juice)

Garam masala Ready made available.
If not add 4 cardamom, 4 clove,1tsp Cummin,1tsp pepper, 1bay leaf, small stick of cinnamon mix it in blender.

Ginger garlic paste ready made available in shop if not blend equal quantity of ginger and garlic in a blender.

Palm Jaggery Payaasam (Milk dessert)

Paayaasam

Paayaasam is a milk dessert. Here the dessert is substituted with palm jaggery or palm sugar instead of cane or white sugar.

Recipe

Half a litre milk

500gm of vermicelli. It’s available in both brown and white colour.

Add Sago to your need.Soak it in warm water.

Sauté the vermicelli in ghee or clarified butter and set aside.

Sauté the cashews and raisins and set aside.

Boil the milk till it turns frothy. Add the palm jaggery or palm sugar till it dissolves completely.

Add the vermicelli and sago when it’s boiled completely.

Atlast add cashews and raisins.

Ragi vermicelli goes well with jaggery. Please let me know if you tried it or like it in comments below.

20 mins Mutton Curry

Recipe

It’s a mild curry to suite your tongue.

Take a pressure cooker.

Add Onions two chopped

Add cloves 3, cardamom 3, bayleaves 2

Green chillies 3 or 7 slit (depends on the spice you need)

Ginger garlic paste 1 tbsp

Add turmeric 1 tsp

Coriander 2 tbsp

Aubergine chopped

Yoghurt 1 or 2 tbsp

Lime 1

Salt to taste

Mix it all well.

Add half kg of mutton to it.

Stir it well.

Leave it in high flame for seven whistles so that the meat will turn soft.

Squid Vada

Squid

Squid is one of the widely loved sea food of all time. One of the Indian ways of doing squid is Squid Vada.

Take half kg of squid. Blend the chopped squid in a mixer and add in salt, 2tbsp of coriander powder, 1 tsp of turmeric and make a small bun out of it. And shallow fry it in simmer. Shallots can be optional. Squid Vada is ready.

Prawn and Squid can also be blended together.

Tomato Rasam (Pepper water)

This curry is bit hot and spicy with a lot of pepper. But you are the boss, reduce the pepper in it if it’s too much for you.

Ingredients

Soak and dissolve some tamarind in the water. Half lemon size. Remove the pulp.

Add little salt in the water.

Blend in 1tbsp of pepper,Half tbsp of cummin, 1 or 2 green chillies, few dry curry leaves.

Blend in two medium sized tomatoes.

Take a pan and pour little oil and add in some dry red chillies and blended mixture. Sauté it long in simmer.

The crushed garlic is added to it too.

Atlast pour in the tamarind water.

Garnish it with coriander leaves.

As it’s tamarind water don’t allow it to boil to the fullest.

Other way to do it real quick is add in the blended mixture of tomatoes and others in the tamarind water and pour it straight with the oil and red chillies.

Recipe

De-vein the prawns and deshell them.

Shallots -3

Garlic-3

Ginger

Turmeric powder -2tsp

Mustard-1tsp

Dry red chillies- 6

Curry leaves

Take a large pan and add coconut oil. Add mustard seeds, curry leaves, dry red chillies, chopped shallots, garlic, ginger. Sauté it well till the shallots are translucent.Add turmeric powder. Add in the one kg of prawns and add salt as required.

Cloves

Cloves are dried aromatic buds of a tree. It’s used widely in Indian cuisine and is researched wide for it’s properties.

Cloves belong to the family Myrtaceae. Syzgium aromaticum

Presenting to you some of the properties of clove and how could it be consumed.

Cloves are rich in Vitamins, minerals and antioxidants. It’s also good in antibacterial, anti inflammatory and analgesic properties.

Vitamin C acts as a boost to the immune system.

It has anti bacterial, anti-inflammatory and analgesic properties.

It improves digestive enzymes production and study shows that it treats ulcer, reduce gastric problems and help treat nausea.

For nausea dip a kerchief in the clove oil and smell. Roasted clove powder in honey gives relief from vomitting.

It has local anaesthetic property that could give temporary relief to the toothache before attended by the doctor.

Inhale the steam of clove to get releaved from respiratory problems such as sore throat, stuffy nose, common cold, asthma and other sinus conditions.

Liver detoxifies the blood and it’s so crucial it functions well. Eugenol in the clove improves liver function.

Pain reduction and anti-inflammatory

Clove powder with rock salt in water heals headaches

Mix coconut oil and clove powder and apply on the painful areas.

Bone health

Cloves are rich in flavonoids, Manganese and Eugenol. These increase bone density and helps in bone creation. Manganese is both anti-bacterial and improves brain health.

Gum health

Clove kills bad breath if taken with basil (or mint) as a mouth wash. It also reduces the percentage of bacterial decay and reduces plaque formation. It’s been tried and tested for 21 days.

Cancer prevention

Eugenol, a compound in clove has anti cancer properties and is still under research. Large doses of eugenol intake is found to be toxic to health.

Polyphenols

Polyphenols are widely seen in plant products. These compounds in cloves lowers cholesterol, improves artery function, longevity, defends against free radicals in blood.

Vitamin K in cloves helps in healthy blood clotting. Individual intake of Vitamin K capsules need a doctor’s consultation.

These spicy, sweet, aromatic cloves could be added in cakes, cuisines, boiled water, with honey or can be chewed. Make it a part of your life as it holds a lot of goodness within it.
